From the time I was 5, I enjoyed being in the kitchen. Watching my mom and Yiayia prepare all of these tasty dishes for our family. There was a tight bond we created and the older I get, the more I realize how special it is to share that bond. \
In a face paced world, who has time to cook anymore. Not to mention all of the quick and easy options we can grab. Lots of my friends, family and clients would consider themselves “emotional eaters”, usually in a negative way.
I look at food as a passion. It is something that I truly enjoy. I will share some of my favorite recipes. I have learned how to make many of my families traditional recipes and throw a healthy twist to them.
Here is one that is just delicious:
YIAYIA APPROVED***Stuffed peppers and tomatoes. In greek it is known as Gemista (pronounced “Yummy -sta) or you can just call it the yummy stuff
Here’s what you need:
3 red peppers
1 c quinoa
2 garlic cloves
2 tbsp olive oil
4 oz feta cheese
1 can diced no salt tomatoes
preheat oven to 375. Cut the top of peppers and tomatoes off, wash and remove all seeds. Chop onion, zuchinni, garlic, mushrooms and saute over medium heat until browned. Cook quinoa in a separate pot add the veggies to pot once quinoa is done. Add tomatoes, oregano salt and pepper to the mix and stir for 2 minutes. Stuff the peppers and tomatoes with mixture and sprinkle some feta cheese on top. Add the lids back to close. Place the peppers and tomatoes on a pan and heat in the oven for 60 minutes or until a fork easily goes through the skin. Add salt and pepper to taste and enjoy. 😀
